Maple Sausage Pancake Bites

I don’t talk enough about our love of breakfast. I was just watching a report on the morning news this morning about how cereal is falling out of favor, so I figure my timing is perfect. These are amazing fresh out of the oven and last in the fridge so you can grab and go any morning. Bonus: they’re so delicious, savory and easy (three of my favorite things in the kitchen!).

  • 2 cups of your favorite pancake mix (we love Stonewall Kitchen’s buttermilk pancake & waffle mix)
  • 1 1/2 cup of water
  • 1 lb cooked breakfast sausage (I use the fully cooked Turkey Sausage Crumbles from Jimmy Dean)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup pure maple syrup

Preheat oven to 400 degrees and spray a 12 cup muffin tin with cooking spray. In a large bowl, stir together the pancake mix and water. Add the sausage, cheese, and syrup, mixing well. Spoon about a quarter of the cup of the mixture into each muffin tin. Bake for about 10-14 minutes until they are golden brown.

Serve with some additional syrup on the side for dipping and your favorite breakfast beverage. To reheat, just put the amount you’d like on a microwave-safe plate and heat for 30 seconds at a time until they’re the temperature you’d like.
