Oh it’s a magical time of year in my part of the country where weekends mean taking meandering drives in search of all kinds of goodness from our local orchards. And let me tell you, it never disappoints. But I’m always on the hunt for creative ways to use the apples we come home with. This recipe needs five ingredients and is super quick to pull together.

2 sheets of frozen puff pastry, thawed
4 apples, thinly sliced
1/2 tbsp flour
1 tsp sugar
1 tsp cinnamon (or if you have it, I love using pumpkin pie spice)
2 tbsp unsalted butter, melted

Toss the apples with the sugar, flour and spices and set aside. There’s no need to peel the apples (unless that’s your preference) or pre-cook them. Roll out each sheet of the puff pastry dough and cut into 8 equal squares. Brush the inside lightly with some of the melted butter and put a couple tablespoons of the apple mix (don’t overstuff) in the center of each pastry square. Bring the edges of the dough up to meet in the middle and give each a little bit of a pinch to seal. Brush each square with a bit more of the melted butter (you can give a little sprinkle of sugar on top too for a little extra sweetness and color).

Bake on a parchment lined baking sheet in a 400 degree oven for 15 minutes or until golden brown. Serve warm. Store any leftovers in the fridge. To reheat, I just put them in a 350 degree air fryer for about 8-10 minutes.
