We’re back with a new game day favorite. Now that I found egg roll wrappers, I’ve been spending an unusual amount of time on weekends trying to figure out what I can stuff in them!

Egg Roll Wrappers (I used 8 so I didn’t over-stuff them)
4 links of Italian sausage (sweet or spicy)
1 medium onion, sliced
1 bell pepper, sliced
1 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese
Olive oil
Marinara Sauce, for serving
Start by cooking the sausages in an air fryer for about 12 minutes at 370 degrees (make sure you flip them half way through). When they’re cooked, remove and slice them thinly on a cutting board. While you’re slicing the sausage, cover the bottom of the air fryer basked with foil, add the peppers and onions and give them a spray of olive oil. Cook them at 370 degrees for about 10 minutes until they’re nice and soft, giving the basket a shake half way through.
Lay out the wrappers on a clean work surface as a diamond and fill with some sausage, vegetables, and cheeses (you’ll want just about two to three tablespoons in the wrapper). Bring the bottom point up to the filling, fold in the sides, brush the exposed wrapper with a bit of water and bring it up and around to seal. Working in batches (I can fry four at a time), give each eggroll a spray of olive oil and cook for 5 minutes or until they’re golden brown (again, give them a flip half way through).
Serve with some heated marinara and enjoy!
