One of the problems with exploring the local farm market and apple scene in the fall is apparently our kryptonite is not bringing home any new cheese we think sounds interesting (or the samples taste too good to pass up). But sometimes when it’s game day, I just don’t want cheese and crackers so we got a little creative this week!

Starting at the top, we have some mini meatballs. I just used:
One pound of meatball mix
Half a cup of seasoned breadcrumbs
Quarter cup of parmesan cheese
One egg
Couple tablespoons of milk
Teaspoon or two of minced onion,
Parsley, salt and pepper to taste
Mix everything gently then shape into one inch balls. I like to bake them by lining a baking sheet with foil then laying the meatballs on a wire rack to drain off the fat while they are in the oven. They baked at 400 degrees for about 8 minutes. I just served with our favorite jarred marinara sauce.
While the meatballs were in the oven, I cooked some fresh tortellini and rinsed it in cold water when it was done. I made mini skewers alternating tortellini, turkey pepperoni, Asiago cubes (mozzarella pearls work well too), green bell pepper and a Kalamata olive.
I wanted something a little more hearty than crackers, so I took a piece of garlic naan and topped with seasoned olive oil (infused with garlic, oregano, basil and rosemary). I topped with some crushed red pepper and topped with shredded mozzarella. I put it in the air fryer at 380 degrees for about 5 minutes (or until golden, melty brown)
Then I opened a couple of our new cheese spreads: one was Asiago and the other a cheddar bacon.
And it was a delicious way to munch our way through the day’s games! What do you like to put on a snacking board? Whatever it is, I hope you enjoy in good health and surrounded by those you love.
