Some days call for the kind of dinner that takes care of itself. You know the feeling: busy afternoon, the house a little too quiet (or maybe a little too loud), and you want to walk into the kitchen to the smell of something already simmering away. That’s where this slow cooker pork chop recipe comes in. It’s hearty, tangy, and full of those cozy “what’s cooking?” aromas that drift through the house.
This one’s been a family favorite for years. It’s simple enough for a weeknight, but special enough to serve when you want dinner to feel like an occasion. And the best part? A short prep, then the crock pot does the work while you get on with your day.

Ingredients
- 4 thick-cut boneless pork chops
- Salt & pepper
- 1 onion, sliced
- 1 green pepper, sliced into strips
- 2 celery ribs, chopped
- 1 can stewed tomatoes
- 1/2 cup ketchup
- 2 tbsp apple cider vinegar
- 2 tbsp brown sugar
- 2 tbsp Worcestershire sauce
- 1 tbsp beef bullion (or one cube)
- 2 tbsp cornstarch
- 2 tbsp beef stock
Let’s Cook!
- Season the pork chops with salt and pepper. Place in the bottom of the crockpot.
- Add the onions, pepper and celery on top of the chops.
- Pour the stewed tomatoes over the veggies and chops.
- In a small bowl, mix the ketchup, vinegar, brown sugar, Worcestershire sauce and beef bullion. Pour over the top of the vegetables.
- Cover and cook on low for 5-6 hours.
- Combine the cornstarch and beef stock till smooth. Stir into the sauce. Turn the crockpot up to high and cook for 30 minutes to let the sauce thicken up.
