Turkey Heroes: A Sandwich Worth Celebrating

This recipe is from way in the archives – honestly, back to the recipe book that I record our favorites in. I love going through once and a while to find old favorites I hadn’t made in a while which brings us to this hearty sandwich.

2 tbsp butter, softened
1 clove garlic, pressed
4 crusty rolls
2 cups diced, cooked turkey
2 tbsp finely diced red onion
1 cup diced tomatoes
1 tsp oregano
1 tsp capers
2 tbsp olive oil
4 slices of provolone cheese
12 slices of pepperoni (or more never hurts)

Carefully cut each roll about 3/4 of the way down. Combine the butter and garlic and spread on the inside of the rolls. Bake 5 minutes at 400 degrees.

While the rolls are heating, add olive oil to a pan and cool the turkey, onions, tomatoes, oregano and capers until heated through. Spoon the mixture into the rolls, top with the pepperoni slices and cheese.

Return to the oven and bake until the cheese is bubbly.

I served them with some thin-cut fries tossed with olive oil and ranch seasoning in the air fryer and a tossed salad. Simple, hearty and delicious. There’s something about the tasty of the capers that puts it over the top!
