Cozy Apple Bread To Warm Chilly Days

With winter in full swing, there’s nothing better than filling the kitchen with the warm aroma of freshly baked apple bread. When I found a couple of apples on the verge of being forgotten, I knew exactly what to do! This easy apple bread recipe is moist, flavorful, and the perfect way to use up extra apples. And we are really happy I decided to make it!

Filling

  • 2 apples, diced (I used Granny Smith)
  • Juice of half a lemon
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon

Batter

  • 1 stick of unsalted butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/3 cups flour
  • 1 tsp baking power
  • 1/2 cup orange juice

Let’s cook!

  • Preheat oven to 350 degrees
  • Prepare the filling: Toss together the ingredients for the filling in a small bowl. Set aside.
  • Spray either one 9 inch loaf pan or two 7 inch loaf pans with cooking spray
  • In a large mixing bowl, beat the butter and sugar until light and fluffy.
  • Beat in the eggs and vanilla until fully combined.
  • Mix in the baking powder first to distribute evenly, then gradually stir in the flour.
  • Add the orange juice and stir until just combined
  • Assembling:
    • For one loaf: Pour half the batter into the pan, layer with the apple filling, then top with the remaining batter.
    • For two loaves: Divide ¼ of the batter between each pan, layer the apple filling evenly, then top with the remaining batter.
  • Baking:
    • One loaf: Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
    • Two loaves: Bake for 40 minutes.
  • Cool & Enjoy!

Bonus tip: I like making two smaller loaves because I think they look so rustic (I love being able to pull one out of the freezer. They’ll last three months).
