Weekends around here usually mean one thing: brunch. But between errands, events, and trying to soak up a little downtime, I needed something quick, easy, and satisfying. These baked breakfast wraps were the perfect solution: warm, cheesy, and make-ahead friendly.

- 6 small flour tortillas
- 12 breakfast sausage links
- 2 tbsp unsalted butter
- 1 cup diced bell peppers and onions
- 1 1/2 shredded cheese (I used pepper jack just to spice things up)
- 6 eggs
- 1/4 cup buttermilk
- Salt & Pepper to taste
Let’s Cook!
- Pre-heat the oven to 350 degrees
- Cook the breakfast sausage (I used the air fryer at 360°F for 10 minutes). Set aside.
- Melt the butter in a skillet. Saute the pepper & onion until just soft (you want a bit of crunch)
- Add the eggs and scramble gently until just set. You want them a little soft since they’ll finish cooking in the oven.
- Add half a cup of the cheese to the top (no need to stir it in because it will get mixed up when you assemble the wraps)
- Spray a baking pan with cooking spray
- Place two links of sausage on each tortilla and spoon the egg mixture over the top
- Roll the tortillas like an enchilada and place in the prepared baking dish
- Sprinkle the remaining cheese over the top.
- Bake until the tortillas are golden brown and the cheese is melted.
- Sprinkle with a bit of cilantro to give it a little pop of color.
- Serve and enjoy!
Spoiler: the hardest part is not overstuffing them. (I failed as you can clearly see.). If you’re so inclined, serve it with some salsa. Otherwise, a little fruit salad rounds out your brunch perfectly!
