April was a busy month in our kitchen. Some weeks called for fast and flavorful, others gave me space to try something new. And like always, a few dishes made repeat appearances without complaint.
Here’s a look at what actually made it to the table, what’s going into regular rotation, and the recipe I’m still thinking about days later.
The Repeat Offenders
These were on rotation more than once (and no one was mad about it).

Go-To Frittata:
Great for dinner, better for breakfast the next day

Overnight Oats:
Our absolute go-to office breakfast because you can customize it with just about anything (think berries, dark chocolate, or peanut butter…)

Tomato Soup:
I really need to make this more often than just during Lent because it’s got the most amazing flavor (especially when you add a splash of white balsamic vinegar just before serving!)
Midweek MVPs
Easy, prep-ahead friendly, and exactly what I needed after a full day.

Easy Chicken Scampi:
When life gives you lemons and you need a dinner quick…

Taco Pie:
The perfect weeknight dinner, especially when everyone’s craving tacos but you’re out of shells or tortillas.

Chicken Stir Fry:
Fry with an Air Fryer Twist: quick, flavorful, and full of color
Bonus! Sweet Treat of the Month
Because dessert does not need to wait for a special occasion.

No-Bake Peanut Butter Chocolate Pies:
When you want a sweet treat fast and no oven required.
Looking back at what we cooked this month reminds me how much joy comes from those everyday wins and the recipes that make life easier, tastier, or just a little more fun.
