Summer Staple: Tortellini Pasta Salad with Corn & Cherry Tomatoes

This pasta salad has become a picnic staple in our house. Make it once and you’ll suddenly be asked to bring it to every summer gathering. It’s light, fresh, and just tastes like summer. Even the die-hard “pasta salad must have mayo” crowd will approve!

  • 1 package cheese tortellini
  • 2 cups cherry tomatoes, halved
  • 3 ears of corn, cooked and removed from the cob
  • 1/4 cup green onions, thinly sliced
  • Fresh basil for garnish

Dressing:

  • 3 tbsp olive oil
  • 3 tbsp grated parmesan cheese
  • 1 clove of garlic, minced
  • Salt & Pepper to taste

Let’s Cook!

  • Boil the package of cheese tortellini, then rinse in cold water to stop the cooking.
  • In a large bowl, toss in the cherry tomatoes, fresh corn and the green onion.
  • Add the tortellini to the bowl.
  • For the dressing, mix the olive oil, grated parmesan, garlic and pepper.
  • Mix everything well
  • Top with some freshly chopped basil.

Chill it for about an hour to let the flavors come together. If you have leftovers, you might need to wake things up with a splash of olive oil.

This dish is a guaranteed hit at cookouts, picnics, or backyard dinners on the deck. So fresh, so easy, so summer.
