Burgers are a summer staple at our house. Most nights, it’s the classic combo: burgers hot off the grill, topped with melted cheese, lettuce, tomato, and onion. Simple, satisfying, and always a win.

But some weekends? I’m feeling a bit extra. That’s when I like to level up the burger game with a few easy homemade toppings that make everyone at the table do a double take (well, at least I think that’s how they react!).

Pickled Red Onions
These bring the perfect tangy crunch to burgers and sandwiches and are so quick to put together.

  • 1 medium red onion, thinly sliced (use a mandoline if you want super even curls)
  • ½ cup white wine vinegar (I threw in a couple teaspoons of jalapeño lime white balsamic for a little extra bite)
  • 1 cup hot water
  • 1 tablespoon sugar
  • 1½ teaspoons kosher salt

Let’s Cook!

  • Pack the red onion into a clean jar.
  • Mix the vinegar, hot water, sugar, and salt until dissolved.
  • Pour over the onions, making sure they’re fully submerged.
  • Let cool at room temp, then refrigerate.
  • They’re ready in about 30 minutes, best after a few hours. Keeps for up to 2 weeks.

Copycat Big Mac Sauce
There’s a million variations of this one, from simple to half your spice rack This is our favorite.

  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp sweet pickle relish
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Let’s Cook!

  • Place everything in a mason jar
  • Give it a good stir to combine all the flavors
  • Refrigerate until ready to serve
  • Keeps 3-5 days in the fridge

Cheese Sauce
Because sometimes, melted cheese just isn’t enough (save this one for special occasions).

  • 1 tbsp unsalted butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup American cheese (shredded or cubed)
  • Salt to taste

Let’s Cook!

  • Melt the butter in a skillet
  • Stir in the flour and whisk until the flour is cooked and a paste has formed
  • Pour the milk in a bit at a time, whisking to remove any lumps
  • Add the cheese and whisk until smooth and creamy
