Many holidays ago, the moms in the neighborhood got together for a cookie exchange. You know the drill: everyone shows up with four dozen of their favorite cookies, and the rest of the night is filled with wine, story swapping, and the kind of group therapy you only get from a room full of women juggling careers, young kids, and life. The husbands always wondered why it took so long, but we never told.

Somewhere along the way, I completely forgot about this particular cookie. But after making it again this year, I have no idea why it ever fell off the list. It’s that perfect little sweet-meets-salty bite: a touch savory from the peanuts, a touch sweet from the chocolate, and just fancy-looking enough to impress without requiring any effort at all. My kind of holiday magic.

Ingredients

  • 3/4 cup (1 1/2 sticks) butter, softened
  • 1 1/2 cups firmly packed light brown sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 package (6 squares) white chocolate, divided
  • 1 cup salted peanuts, coarsely chopped
  • 1 square semi-sweet chocolate

Let’s Bake!

  • Preheat oven to 350°F.
  • Line a 13×9-inch baking pan with foil or parchment paper, leaving some overhang on the sides; set aside.
  • Beat butter and brown sugar with an electric mixer on medium speed until light and fluffy.
  • Blend in eggs, flour, and baking powder.
  • Chop five squares of the white chocolate; stir into the batter with the peanuts.
  • Spread batter into the prepared pan.
  • Bake 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool completely in the pan.
  • Microwave the remaining square of white chocolate in a microwave-safe bowl on HIGH for 1 minute, stirring after 30 seconds. Drizzle over the baked rectangle.
  • Melt the semi-sweet chocolate in a separate microwave-safe bowl on HIGH for 1 minute, stirring after 30 seconds. Drizzle over the rectangle.
  • Lift from the pan using the foil/parchment handles.
  • Cut into triangles.
  • Store in an airtight container once the chocolate sets.

They’re the perfect little holiday bite, and I’m so glad they’ve made their way back into the rotation this season!
