Sunday Brunch Casserole
Easy, savory, and ready to shine on your brunch table, this casserole has all our favorite ingredients: sausage, cheese, potatoes covered in a rich egg custard.
- 1 pound ground breakfast sausage
- 1/2 cup diced onion
- 1/2 cup diced green pepper
- 5 eggs
- 3/4 cup milk buttermilk works perfectly
- 1/2 tsp season salt
- 1/2 tsp ground pepper
- 1 1/2 cups shredded cheddar cheese
- 2 cups Tater Tots
- 4-6 slices bacon crisply cooked
Grease a 7 x 11′” rectangular baking dish and set aside.
In a skillet, add some olive oil and cook the sausage until no pink remains.
Drain and remove from heat, reserving a teaspoon of the drippings.
Sauté the peppers and onions until soft.
Whisk the eggs, milk, season salt and pepper.
Put the sausage and vegetables in the bottom of the baking dish, top with half of the cheddar cheese.
Add the Tater Tots in a single layer on top.
Carefully pour the egg mixture over the casserole dish so all the tater tots are covered.
Cover with foil and bake at 400 degrees for 20 minutes.
Add the remaining cheese and return to the oven for another 10 minutes or until everything is golden brown and bubbling.
Top with the bacon and serve.
For a healthier brunch, use turkey sausage instead of pork.
If you don't have bacon, don't worry, the casserole is perfect without it.
