I have a love/hate with beef stir fries. I absolutely love them when the beef is cooked well, but not so much when the beef gets overcooked (which can be a pretty easy thing to do). So I tried a new method this week and was super happy with the results.

Marinate a couple strip steaks in a half cup of light soy sauce, 3 tbsp of brown sugar, 2 tbsp cornstarch, a pinch of red pepper flakes, and a one inch piece of fresh grated ginger (more is never bad) for at least an hour.
Before you start cooking, prepare a pot of your favorite rice (I used basmati rice)
In a grill pan, cook the steaks until medium (about 10 minutes) and set aside to keep warm. Don’t discard the leftover marinade.
In a skillet, heat a couple tablespoons of olive oil and sauté eight ounces of cleaned snow peas until just soft. Add the leftover marinade and cook until it begins to thicken. Slice the steak on a bias and add to the sauce and snow peas till it’s nice and warm. Serve over the rice with a bit of scallions scattered on top.
Cooking the steaks in the grill pan ensured that I got the correct cook on them and they didn’t get overdone. That was a win for us!
