I’m able to sneak in another game day go-to thanks to March Madness. NCAA Tournament time means of lots of time watching hoops and of course we need a good snack to accompany the games. This Buffalo chicken spread is a nod to my mother in law who would make a simpler version every holiday season. It’s so simple to make and never fails to satisfy!

2 cups cooked chicken, finely diced
4 ounces softened cream cheese
1 tbsp blue cheese dressing
Hot sauce to taste (at least a couple healthy dashes)
2 scallions, finely diced
Mix the chicken and cream cheese until well blended and smooth enough to spread. Add the blue cheese dressing and hot sauce. Mix well to incorporate. Gently stir in the scallions.
Refrigerate for at least 2 hours to let the spread set up (longer lets the flavors come through even better)
Serve with crackers or petits toasts. Adding some carrots, celery and blue cheese for dipping gives that chicken wing kind of vibe!
