If you’ve been following along for a while, you know we love our pasta. So I spend quite a bit of time thinking about new ways to serve it for dinner. One thing I’ve never tried is to make a Bolognese sauce. I’m not sure why because it was super easy, hearty and delicious.

Start by sauteing two finely diced carrots, one small diced onion, a stalk of finely diced celery and half a cup of diced pepper in olive oil until soft. Add a couple cloves of garlic (minced) and one pound of meatloaf mix and cook until browned. Salt and pepper to taste. Add a quarter cup of red wine (or beef stock) and a 28 ounce can of tomato puree. Season with oregano, parsley and red pepper flakes and simmer for at least 45 minutes. Serve with rigatoni and freshly grated Asiago.

I’m also so happy that grilling season has returned so I decided to make sauce right on the grill.

I started by grilling some red and yellow peppers, zucchini and onions. When they had a nice char, I added them to a pan with red wine and chopped grape tomatoes and let everything simmer while some hot Italian sausage was grilling. That was really all there was to it.

The in progress shot didn’t do the dish justice, but I plan on making this on a regular basis – especially once we get into the farmers market season and I can pick up all kinds of fresh veggies to grill.
