Now that I’ve gotten back into the rhythm of the office, I’ve been trying to find healthy things to bring to work. Here’s a couple I’ve been loving lately because you can change them up and not get bored with what you’re eating.

I wish I could say I was organized enough to make breakfast before I leave the house, but I’m just not. So these overnight oats have been a welcome addition to the rotation.

1/2 cup old fashioned rolled oats
1/2 cup milk (almond is my go to)
1/4 cup Greek yogurt (I love vanilla)
1 tbsp maple syrup
Dash of almond extract

Mix everything in a mason jar (I do like to add in some fresh berries). The oats take at least 2 hours to soak up the milk. Then you can just enjoy for a few days!

I love jar salads, but it’s taken me a long time to get the order of the layers right if I’m making a batch (which can last 5-7 days in the fridge):

  1. Couple tablespoons of your dressing of choice
  2. Hard veggies (peppers, carrots)
  3. Grains (I’ve been loving mini spinach/cheese tortellini)
  4. Protein (I’ve been using rotisserie turkey – leftovers can be used for sandwiches later in the week)
  5. Cheese
  6. Soft veggies (tomatoes, olives, etc.)
  7. Extra toppings (nuts or seeds)
  8. Greens

The hardest part for me is getting everything out of the jar and on to a plate!
