Now that I’ve gotten back into the rhythm of the office, I’ve been trying to find healthy things to bring to work. Here’s a couple I’ve been loving lately because you can change them up and not get bored with what you’re eating.

I wish I could say I was organized enough to make breakfast before I leave the house, but I’m just not. So these overnight oats have been a welcome addition to the rotation.
1/2 cup old fashioned rolled oats
1/2 cup milk (almond is my go to)
1/4 cup Greek yogurt (I love vanilla)
1 tbsp maple syrup
Dash of almond extract
Mix everything in a mason jar (I do like to add in some fresh berries). The oats take at least 2 hours to soak up the milk. Then you can just enjoy for a few days!

I love jar salads, but it’s taken me a long time to get the order of the layers right if I’m making a batch (which can last 5-7 days in the fridge):
- Couple tablespoons of your dressing of choice
- Hard veggies (peppers, carrots)
- Grains (I’ve been loving mini spinach/cheese tortellini)
- Protein (I’ve been using rotisserie turkey – leftovers can be used for sandwiches later in the week)
- Cheese
- Soft veggies (tomatoes, olives, etc.)
- Extra toppings (nuts or seeds)
- Greens
The hardest part for me is getting everything out of the jar and on to a plate!
