Well friends, we’ve finally hit the post-holiday lull, as well as a bit of a cold snap so I’ve been thinking about comfort foods. As we watched our first snow storm of the year roll in, I decided it was time for some gumbo to warm us up!

One sliced bell pepper
One small onion, diced
Half a package of kielbasa, cut into thin slices
2 1/2 cups chicken stock
1 can of stewed tomatoes
1-2 tsp Cajun seasoning
Dash of red pepper flakes
1 small eggplant, diced
1 cup cooked rice
1 skinless chicken breast, cooked and diced

In a Dutch oven or large stock pot, heat some olive oil and sauté the peppers and onions until soft. Add the kielbasa and cook until the sausage is lightly brown.

Add the broth and tomatoes and bring to a boil. Add the eggplant and chicken and simmer for about 15 minutes until the eggplant is tender and the chicken is warm. Add in the rice and simmer for another 5-10 minutes to let the rice absorb the amazing flavor of the broth.
