I was putting away groceries the other day and discovered the last of our leftover turkey in the freezer. Plus as you know, we’re on a comfort food kick since it’s pretty wintery which meant I thawed it out and started making some turkey & biscuits in a cast iron skillet. (No cast iron skillet? Just make sure you use an oven-proof frying pan)

1 package Grands biscuits (or make your own)
4 cups cooked turkey, diced
2 cups frozen mixed vegetables
1 1/2 cups turkey gravy
1/2 cup chicken stock
1 tsp each of dried thyme & dill
Fresh ground pepper to taste
1/2 cup heavy cream
Parsley for garnish
2 tbsp melted butter

Bake the Grands on a parchment-lined baking sheet for about 12 minutes in a 400 degree oven. (you don’t want them to be fully baked, but you also don’t want them to be gummy at the end).

In the cast iron skillet, combine the turkey, veggies, gravy, stock and spices. Heat until the veggies are cooked (this usually coincides with how long you have the biscuits in the oven). Stir in the heavy cream and heat until bubbly.

Place the biscuits in a single layer, covering the cast iron skillet. Return to the oven for about 5-7 minutes to let the biscuits finish cooking. Brush the top of each biscuit with the melted butter and sprinkle with the parsley (you can also add a bit of garlic powder to the melted butter if you like). Bake for another 2 minutes or until golden brown.

It’s so simple, filling, and perfect for a cold winter night. Plus a great way to use up leftovers!
