There’s nothing quite as satisfyingly as a hot and hearty bowl of soup on a cold night. Bonus, I have proven myself completely incapable of making a small batch of soup, so there’s always leftovers for lunch! This one is so easy to pull together and you probably have everything in your pantry already to get it cooking.

1 pound lean ground beef
1 onion, diced
2 cups tomato juice
1 1/4 cup water
3/4 cup heavy cream
1 tsp Italian seasoning
1/4 tsp crushed red pepper
1/4 tsp ground black pepper
1 cup frozen peas
1 cup ditalini pasta

In a Dutch oven, cook the ground beef and onion until the beef is browned. Drain the beef. Stir in the tomato juice, water and spices and simmer on medium heat for about 10 minutes. Add the peas and simmer until the peas are cooked. Finally stir in the heavy cream and pasta and cook for about 10 minutes until the pasta is tender.

Serve with some crunchy rolls or a baguette and enjoy! What’s your favorite soup to keep away the winter chill? No matter what it is, I hope you enjoy it in good health and surrounded by those you love.
