Easy S’mores Cookie Bars (No Campfire Required!)

While flipping through an old cookbook, I stumbled upon a magazine clipping from who-knows-when and the waves of nostalgia washed me away for a few minutes! These S’mores Cookie Bars bring back all the flavors of classic campfire s’mores, but with a buttery graham cracker crust and gooey chocolate-buttery layers. The best part? They come together in minutes with simple pantry staples!

  • 1/2 cup butter
  • 1 1/2 cups graham cracker crumbs (basically a sleeve of crackers)
  • 1 can of sweetened condensed milk (14oz)
  • 2 cups chocolate chips (pick your favorite: semi-sweet, milk, even dark!)
  • 1 cup butterscotch chips

Let’s cook!

  • Preheat the oven to 350°F.
  • Melt the butter in a 9×9 baking pan in the oven.
  • Make the crust: Sprinkle the graham cracker crumbs over the melted butter, mixing until combined. Pat the mixture firmly into the pan to form the crust.
  • Layer the ingredients: Pour the sweetened condensed milk evenly over the crust. Sprinkle with chocolate chips and butterscotch chips, pressing them gently into the mixture.
  • Bake for 25 minutes, or until the top is lightly browned.
  • Cool completely before slicing into squares.

I used to make a version of these cookie bars around the holidays with shredded coconut and chopped pecans, but honestly—we love the simplicity of this version even more! Have a favorite twist on s’mores flavors? Let us know so we can try them!
