I was looking through a cookbook the other day and found a recipe that had been clipped from a magazine I can’t imagine how many years ago. After the waves of nostalgia passed, I thought these cookie bars would remind us of s’more season (with a little personal spin to it). Plus they came together with ingredients I had on hand in the pantry!

1/2 cup butter
1 1/2 cups graham cracker crumbs (basically a sleeve of crackers)
1 can of sweetened condensed milk (14oz)
2 cups chocolate chips (pick your favorite: semi-sweet, milk, even dark!)
1 cup butterscotch chips

Pre-heat oven to 350 degrees. In a 9×9 baking pan, melt the butter in the oven. Sprinkle the crumbs over the melted butter, mixing to combine. Pat the mixture down to make a crust. Pour the sweetened condensed milk over the crumb mixture. Top with the chips (press them firmly into the milk). Bake 25 minutes or until lightly browned. Once they’ve cooled completely, cut them into squares.

I used to make something similar at the holidays that also added shredded coconut and chopped pecans. We honestly liked the simplicity of these better!

Eat well friends.
