Hearty Chicken Stew with Corn Dumplings: A Cozy One-Pot Meal!

Ever rediscover a recipe and wonder why you stopped making it? That’s exactly what happened with these Chicken Stew with Corn Dumplings—one bite in, and we were hooked all over again! With a rich, slightly smoky broth and soft, fluffy dumplings, this one-pot meal is the perfect cozy dinner.

Stew base

  • 2 cups cooked, boneless chicken breast, cubed
  • 2 tbsp extra-virgin olive oil
  • 1 small onion, diced
  • 1 green pepper, diced
  • 2 cloves of garlic, minced
  • 1 can stewed tomatoes
  • 2 cups chicken broth
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper

Corn dumplings

  • 1/3 cup cornmeal
  • 2/3 cup flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 egg, beaten
  • Milk
  • 1 tbsp unsalted butter, melted
  • 3/4 frozen corn, thawed
  • 2 tbsp chopped parsley

Let’s cook!

  • Sauté the vegetables: Heat the olive oil in a large Dutch oven over medium heat. Add the onion, garlic, and green pepper, cooking until soft.
  • Build the broth: Stir in the stewed tomatoes, breaking them up with a spoon as they heat. Add the chicken broth and cooked chicken, then bring to a boil.
  • Season & Simmer: Stir in the smoked paprika and cayenne pepper. Reduce heat, cover, and let the stew simmer for 20 minutes.
  • Make the dumplings: In a mixing bowl, whisk together the cornmeal, flour, salt, and baking powder.
  • Prepare the wet ingredients: In a measuring cup, place the beaten egg, then add milk until you reach ½ cup total. Stir this mixture into the dry ingredients.
  • Finish the batter: Fold in the corn, melted butter, and parsley.
  • Cook the dumplings: Drop spoonfuls of the batter directly onto the simmering stew. Cover and let cook for 10 minutes, or until the dumplings are fluffy and cooked through.
  • Serve & Enjoy! For some extra kick, top each dumpling with pickled jalapeños. Spoon into large bowls and dig in!

Bonus tip: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat gently to keep the dumplings soft.
