One of my favorite fast meals is a good stir fry. But let me confess: I don’t always have the patience to cook the meat in batches so it sears properly instead of getting mushy. So I decided to experiment by marinating the chicken and starting it in the air fryer. The result? A total chef’s kiss, packed with layers of flavor.

Marinade:

  • 1/4 extra virgin olive oil
  • 1 tbsp sesame oil
  • 1 tbsp rice wine vinegar (or mirren)
  • 1 tbsp soy sauce
  • 1 tbsp minced ginger
  • 1 tsp garlic powder
  • 1 tsp Chinese Five Spice (or allspice & cloves)

Stir Fry

  • I pound boneless, skinless chicken breasts, cubed
  • 1 medium onion, sliced
  • 8 oz. snow peas, cleaned
  • 1/4 chicken stock
  • 2 tbsp Hoisin sauce
  • 1/2 tsp red pepper flakes
  • 1 tsp ginger
  • 1 tsp garlic powder

Let’s Cook!

  • Combine all the ingredients for the marinade in a mason jar, shaking well to combine.
  • Pour over the cubed chicken and marinate for at least 2 hours.
  • Place the chicken in a single layer in the air fryer. Cook at 360 degrees for 10-15 minutes, shaking every 5 minutes
  • In a large frying pan or wok, heat a tablespoon of olive oil and one teaspoon of sesame oil
  • Quickly stir fry the snow peas and onion until the snow peas are slightly tender and a bright green
  • Add the stock and scrape up any browned bits in the bottom of the pan
  • Season with Hoisin, red pepper, ginger and garlic. Simmer for a couple minutes to combine
  • Add the chicken to the pan, tossing with the sauce until the chicken is heated through.

Serve over rice or try my latest obsession: rice noodles. Sprinkle some green onions and crispy noodles on top and enjoy!
