Spekulatius (German Spice Cookies)

We’re deep in our German Christmas Market era — wandering, snacking, reminiscing — and apparently I’ve decided the only reasonable next step is to recreate everything we find at home. Which brings us to these spice cookies. And no, I can’t pronounce the proper German name either.

Your kitchen is about to smell like pure holiday magic — warm spices, buttery dough, and that unmistakable it’s-December feeling. I even pulled out the old cookie mold that’s been passed down from my grandmother. If you don’t have one, no worries at all. A small cookie cutter works beautifully here.

Ingredients

Spice Mix

  • 1 ½ tsp cinnamon
  • ½ tsp cloves
  • ½ tsp cardamom
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • Little pinch pepper
  • Tiny pinch allspice

Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tsp spice mix (from above)
  • 1–2 tbsp milk (only if the dough is too dry)

Let’s Bake!

  1. Cream butter + sugar until fluffy.
  2. Add the egg and mix until smooth.
  3. In a separate bowl, whisk flour, baking powder, salt, and spices.
  4. Add dry ingredients to the butter mixture.
  5. Knead gently — the dough will be firm (that’s correct).
  6. Wrap and chill 1 hour to make rolling easier.
  7. Roll thin (⅛ inch). Use cookie cutters or a Spekulatius mold.
  8. Bake at 350°F for 10–12 minutes, just until edges brown.

They’ll crisp up as they cool — the texture is absolute chef’s kiss. And that spice blend? It transforms your kitchen into a full-on holiday wonderland. Depending on your shapes, this batch makes about 4–5 dozen cookies. Store in an airtight container.
