Grilled Stuffed Peppers – One of My Favorite Summer Things

If you’ve been with me for a while, you may have noticed I have a hard time saying no to fresh produce this time of year, especially peppers. Every trip to the farmers market starts with the best intentions, and somehow I come home with enough peppers to fill an entire vegetable drawer.

That’s where these grilled stuffed peppers come in. They’re my favorite way to make sure every last one gets put to good use.

Tender peppers filled with a savory beef, rice, and herb mixture, then topped with plenty of melty cheese, they’re a delicious celebration of everything summer has to offer.

Grilled Stuffed Peppers

Too many peppers from the farmers market? These grilled stuffed peppers are packed with seasoned beef, rice, fresh herbs, and cheese. The perfect way to celebrate summer's harvest.
Course Main Course

Ingredients
  

  • 1 cup cooked white or brown rice
  • 5-6 green peppers
  • 1 lb lean ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tbsp fresh oregano
  • 1 tbsp fresh parsley
  • ¼ cup Parmesan
  • Sat & pepper to taste
  • 1 tsp red wine or balsamic vinegar
  • ½–¾ cup tomato sauce
  • 1 cup cheddar cheese shredded

Let’s Cook!
 

  • Cut the tops off each pepper and remove the seeds & membranes
  • Brush the inside of each pepper with some olive oil
  • Place on a grill pre-heated to medium heat (about 375–400°F), cut side down for 5-8 minutes to let the inside soften and get a char on the tops
  • While the peppers are grilling, saute the onions until soft. Add the garlic and cook for another 2 minutes
  • Add the ground beef and cook until no longer pink
  • Stir in the rice, tomato sauce, parmesan and fresh herbs. Finish with salt and pepper to taste.
  • Cook for 5 minutes to let the flavors combine
  • Fill each pepper generously with the beef mixture, mounding the filling slightly over the top.
  • Grill for 10 minutes.
  • Add the shredded cheese to the top of each pepper. Return to the grill for another couple minutes until the cheese is melted and golden.
  • Serve and enjoy!

Notes

  • If you want to spice things up, add red pepper flakes to the filling
  • Lighten the recipe up by substituting ground turkey
  • Pepper Jack cheese is another great spicy addition
  • Use your favorite cheese – there’s no wrong answer here.
