Sometimes my best dishes come from ideas that got lost in the recesses of my kitchen cabinet. These make-ahead breakfast burritos are one of those recipes.
They’re easy to prep on a weekend and stash in the fridge or freezer, setting you up for breakfast success all week long.
And did I mention they’re completely customizable? Bacon? Sausage? No meat at all? You make the call. The same goes for the cheese and veggies. Use what you love — or what needs to be used up.

Notes From My Kitchen
- Store in a container in the fridge if using within 2-3 days
- Otherwise, wrap individually and store in a freezer-safe bag or container for up to 2 months.
- To serve, microwave for about 2 minutes, turning halfway through, or until heated through
I have a hard time picking my favorite meat and cheese to fill these with, but there’s honestly no wrong answer. I’ve also been known to sneak in a little minced broccoli or spinach to get some extra vegetables in there,
That’s part of what makes this recipe so great. Once you make it once, the possibilities are endless!
Eat well friends!
