We’re right in the heart of summer produce season and I couldn’t be happier. With fresh herbs overflowing (especially the mint that’s overtaking my herb garden!), I’ve been looking for ways to use it beyond just tossing it into water or iced tea.
Enter: this cucumber mint salad. It’s light, bright, super simple to put together, and we loved the cool combo of crisp cucumber and refreshing mint.

- 2 cucumbers, thinly sliced
- 1/2 red onion, cut into thin slices
- 1 cup fresh mint leaves, roughly chopped
- 1/4 c white wine vinegar
- 4 tbsp olive oil
- 2 tsp sugar
- Freshly ground pepper to taste
Let’s Cook!
- In a large bowl, combine the cucumbers, red onion, and mint.
- In a small jar or bowl, mix the vinegar, olive oil, sugar, and pepper. Shake or whisk well.
- Pour the vinaigrette over the cucumber mixture and toss to coat.
- Let sit at room temperature for about an hour to let the flavors come together.
Not sure why I didn’t think of trying mint in a salad sooner, but I’m glad I did! This one is definitely going on repeat while summer lasts.
