Every once and I while, I really get in the mood for some baby back ribs (my family does wish I would be in that mood to make them more often!). But our favorite local meat market had them in the display when I was in there and I decided I had to make a batch (bonus: I love they are butchered to remove the membrane so I didn’t have to deal with it!). The length of the cooking meant they were falling off the bone and so good.

Start with a generous spice rub to coat both sides of the ribs:

1/4 c brown sugar
1 tsp salt
2 tsp black pepper
2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp ground mustard
1/2 tsp ground cinnamon
1/2 tsp celery seed
1/4 tsp cayenne pepper

Wrap in foil (I always put them on a baking sheet in case of leaks) and place in a 250 degree oven for 4 hours. While the ribs are in oven, it’s time to make some sauce to finish them off:

1/2 cup ketchup
3 tbsp white wine vinegar
2 tbsp minced onion
1 tbsp Worcestershire sauce
1 tbsp brown sugar
1/4 tsp ground mustard
1 clove minced garlic

Heat everything in a sauce pan over medium heat until just about boiling. Reduce heat and simmer until the sauce has reduced in half. When the ribs are done from the first wave of cooking, brush both sides generously with the sauce and return to the oven uncovered until the sauce is lightly caramelized (about 10 minutes or so).

I served them with some potato salad and some red cabbage slaw. It had us dreaming of summer cookouts!
