There are few things better than Sunday Brunch. At least in our house. It’s an excuse to relax, hang out and avoid the Sunday Scaries as long as possible. Add in a rainy morning and it’s pretty much perfection in our book!

1 package sausage crumbles (I used Jimmy Dean turkey sausage)
1/2 cup diced onion
1/2 cup diced green pepper
5 eggs
3/4 cup milk (buttermilk works perfectly)
1/2 tsp season salt
1/2 tsp ground pepper
1 1/2 cups shredded cheddar cheese
2 cups tater tots
4-6 slices bacon, crisply cooked
Grease a 7 x 11′” rectangular baking dish and set aside. In a skillet, add some olive oil and heat the sausage and sauté the peppers and onions. Whisk the eggs, milk, season salt and pepper. Put the sausage and vegetables in the bottom of the baking dish, top with half of the cheddar cheese. Add the tater tots in a single layer on top. Carefully pour the egg mixture over the casserole dish so all the tater tots are covered. Bake at 400 degrees for 20 minutes. Add the remaining cheese and return to the oven for another 10 minutes or until everything is golden brown and bubbling. Top with the bacon and serve.
To round out the feast, I served our favorite blueberry lemon loaf and some make-ahead Bloody Mary’s.
