I was having a conversation with a friend recently who was lamenting that there never seems to be anything she can make without a recipe. That got the wheels turning in my head.

Somewhere along the way, I think we started believing that every meal requires a carefully followed recipe, a shopping list, and a plan. But some of my favorite things to make happen when I simply start with good ingredients and a rough idea (ok, it terrifies my family & friends sometimes, but you think by now they’d trust me).

Every dish doesn’t need to be a planned, well-orchestrated affair. Sometimes dinner is just looking in the refrigerator and asking, “What sounds good tonight?”

The best dishes begin with good ingredients and a little love from the kitchen.

Appetizer: Cheese Stuffed Puff Pastry

This is initially a TikTok made me try it, a post-holiday “why did we buy so much cheese?” and my deep, abiding love for puff pastry.

Roll out two sheets of frozen puff pastry dough that’s been thawed to equal sized squares (I usually do 12 x 12). Cover completely with a mix of your favorite shredded cheeses (cheddar, spicy jack, parmesan, Gouda….) Top with the other puff pastry sheet. Roll out the sheet out a second time to make sure all the cheese is well stuck to the dough. Cut into shapes (at Christmas, I used a small star cookie cutter, if people are coming over, I use a ravioli press, if we’re just hungry, squares are perfect. Brush the top with some melted butter. You can add a bit of everything bagel seasoning or parsley to make them fancy. Bake in a 400 degree oven for 15 – 20 minutes or until golden brown.

Main Course: A Spin on the Classic Sausage and Pepper Sandwich

This easy weeknight dinner is all about big flavor, no fuss, as grilled sausage meets crispy potatoes topped with some sharp melty cheese and caramelized peppers and onions sizzled to perfection on the griddle.

Toss cubed potatoes with a little olive oil, salt, pepper, and your favorite spices on a griddle until crispy. While the potatoes are working, grill 4 links of Italian sausage (we always drift toward spicy!) and sauté some bell peppers and onions. To finish, top with a generous sprinkle of parmesan cheese as you toss the ingredients together on the griddle. Top with a little fresh oregano and basil (don’t have any? It’s perfect as is). Dinner? Done.

Main Course: Grilled Steak Sandwiches on Texas Toast

This one has been a staple on the menu for years (ever since we wanted cheese steak and had neither rolls nor the proper cut of beef!)

Grill some thinly-sliced steak (with your favorite seasonings), bake some frozen onion rings, slice up some juicy tomatoes, and serve over thick Texas Toast (always cheese for us). Serve with a little salad on the side and this no-recipe dinner will come together in about 20 minutes. Perfect for busy nights, lazy weekends, or pretty much anytime. Just grill, toast, layer and enjoy!

Main Course: Chicken, Bacon, Ranch Smashburgers

Season a pound of ground chicken with salt & pepper (plus any seasonings you like. Ranch seasoning is a must-have here). Form the ground chicken into three balls. Place on a hot griddle for 5 minutes, smash and flip. Cook for another minute or 2. Adding cheese at this point is optional but highly recommended!

Toast some Ciabatta rolls for a minute before coating with ranch dressing, adding the patties, tomatoes and bacon. Press for a minute and enjoy!

Dessert: Dark Chocolate Bars with Candied Ginger

This one was born from the most delicious candy bar I had at a gourmet chocolate shop on a recent trip. But days after I arrived home I thought, why can’t I do that? Turns out I could (and you can too!)

Melt one bar of good quality dark chocolate baking bar (I tend to use 70% Cocoa) in the microwave for 40 seconds at a time, stirring after each time until it’s smooth. Add candied ginger that’s been diced into pieces about the size of raisins. Spread into a 6 x 6 baking dish lined with parchment. Sprinkle with some flaky sea salt and refrigerate until set (30 minutes). Cut into bars and enjoy! Try all combinations: cherries, cranberries, nuts…. They’re all good!

Whenever I make dishes like these, I’m reminded of what I told my friend. Cooking doesn’t have to be fancy, fussy, or perfectly planned. Some of the best meals come from opening the refrigerator, seeing what you have on hand, and trusting yourself in the kitchen.

Start with good ingredients. Follow your instincts. Taste as you go. And you might just discover your new favorite meal.
